We are delighted to share that, thanks to the warm support of all of you, we have successfully reached our fifth anniversary on 10th Nov 2024.
Our journey began just two months before the world was upended by the pandemic.
We could not have endured it all without the unwavering support and encouragement of each and every one of you.
I would also like to take this opportunity to express my deep respect for Taisho, my husband / owner chef, who has stood resiliently throughout.
Even in the face of trying times, he has never compromised on quality, flavour, or hygiene, dedicating himself daily to his craft with incredible diligence.
He is someone who takes pride in quietly but consistently doing the hard and unglamorous work—a true craftsman through and through.
As the saying goes, “It is nobler to wield a duster than a broom.”
In the case of our Taisho, he takes this principle to heart, with a duster in each hand, one tucked at his waist for backup, tirelessly working under the summer sun or in the shade of winter.
To ensure more people experience his wonderful sushi, I, as Okami-san, will continue to venture out into the world to spread the word.
Please, I kindly ask that no one tries to confine me to our small kitchen as mere support staff.
We do not conform to outdated traditions or to "proven success stories" from different eras or regions.
With only the two of us at the helm, this little boat of ours stays afloat because the chef protects the kitchen while I take on the battles outside.
Our ultimate goal at Sushi Shima, however, is always to ensure our customers have a "delicious and delightful" experience.
As we strive to improve even further, we look forward to welcoming you in the future.
